Pumpkin Granola Bars

We love granola bars as much as the next person but some of them are so full of fat and sugar that we would rather eat a decadent brownie then a supposedly healthy granola bar. That’s why we  love to find granola bar recipes that are healthy and delicious! We got this recipe from our friend and fellow dietitian Carolyn Berry. Feel free to adapt this recipe and add other nuts and seeds as you wish.

These are great to make in the fall with pumpkins but you can also substitute bananas during other times of the year.


2.5cups Rolled Oats

1cup Shredded Coconut

½ cup Toasted Chopped Walnuts or Pecans

½ cup Chocolate Chips

½ cup Craisins

1/3 cup Whole Wheat Flour

Handful of Chia Seeds

Handful of Pumpkin Seeds

¼ cup Flaxseeds, ground

1 tsp Ginger

1 tsp Cinnamon

¼ tsp Nutmeg

½ tsp salt

¾ cup Pumpkin Puree

½ cup Honey or Maple Syrup

¼ cup Hazelnut Oil

1 tsp Vanilla


  1. Preheat oven to 350F
  2. In a large bowl mix together the oats, coconut, chopped nuts, chocolate chips, craisins, whole wheat flour, flaxseeds, ginger, pumpkin chia seeds, pumpkin seeds
  3. In a separate bowl whisk together the honey, oil, pumpkin puree, vanilla
  4. Line granola into a greased 9×13 inch pan bake for 25 minutes or until top is golden brown
