Tasty Taco Salad

Taco salad

Warm summer weather means BBQ season and time for tasty salads. Salads are one of my favourite summer foods because they don’t require turning the oven on and turning my tiny 600sqft apartment into a sauna. The only issue with salads is sometimes I’m hungry 30min later. Not with this tasty taco salad. There is enough vegetables to count for three servings of vegetables and enough protein in this salad to keep you full.

Ingredients:

  • 3 cups Organic Spring Mix
  • 1 Avocado, cut into small pieces
  • 2 Heirloom tomatoes, chopped
  • 1/2 bunch cilantro, chopped
  • 1 Orange Bell pepper, chopped
  • 1/2 cup frozen corn, blanched
  • 2 cups tortilla chips, broken into small pieces
  • Age cheddar cheese (or your favourite kind), shredded

Dressing:

  • 1/2 cup of your favourite salsa
  • 1/2 cup low fat or no fat Greek Yogurt
  • Juice of 1 lime
  • A dash of chili powder

Beef and Black Bean Topping:

  • 1 Jalapeno pepper, chopped
  • 500g extra lean ground beef
  • 1/2 can of black beans, drained
  • 1 tbsp chili powder
  • 1/2 tsp curry powder
  • 1/2 tsp vegeta
  • pinch of cayanne pepper (or more if you like it spicy)
  • 1 Tbsp tomato paste
  • a bit of water just to thicken it
  • 1 Tbsp olive oil

How To:

  1. Heat olive oil in a large hot pan and cook the beef with the jalapeno pepper
  2. Add the black beans and spices, stir and cook for 1 minute
  3. Add the water and tomato paste, cook until it thickens
  4. Prepare all of the salad ingredients and layer as desired, I usually like tortilla chips topped with greens, peppers, tomatoes, corn, beef, avocado, salsa, yogurt and cilantro
  5. For the dressing, mix the Yogurt with 1/2 of the lime juice and the chili powder and put on top of the salsa, drizzle the rest of the lemon juice over everything else

Enjoy!
