Blueberry Bran Muffins

We love the summer for the bountiful local fresh produce available at grocery stores and farmers market. The other day I purchased a 10lb box of blue berries from a local farmer in Richmond (delicious!) and had to be creative with some ways of using these tasty berries. Check out our post on blueberries for other great ways to make full use of local produce.

Makes 12 muffins

Ingredients:

  • 1.5 cups bran flakes cereal
  • 1.5 cups almond milk with 1Tbsp lemon juice (or use buttermilk or regular milk)
  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 1tsp cinnamon
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/3 cup brown sugar
  • 1 egg
  • 1/6 cup honey + 1/6 cup black strap molasses
  • 1/4 cup canola oil (you can also use apple sauce for a lower fat muffin)
  • 1/4 cup walnut oil
  • 2 cups fresh or frozen mixed berries (I used black berries, blueberries and raspberries)

How To:

  1. Preheat oven to 375F
  2. Combine the cereal with milk in a large bowl and let it stand for 10min
  3. Sift together the flour, baking soda, cinnamon, baking powder, and salt
  4. Whisk the eggs, honey, molasses, oil, and brown sugar into the cereal mixture
  5. Make a well in the dry ingredients and pour in the wet ingredients with the berries
  6. Stir just to combine, there should still be some lumps
  7. Spoon into greased muffin tins
  8. Bake 25-30min or until toothpick insterted into middle comes out clean

These are great as a snack with a small piece of cheese or low fat yogurt.

Or Make it a Meal:

  • Pair with low fat Greek Yogurt and a piece of fresh fruit
  • Pair with a boiled egg and glass of milk and a banana
  • Enjoy with a smoothie
