Soaking Beans

It’s cheaper than buying canned and less heavy to cart around the grocery store.

*Note that 1 cup dry beans = 3 cups cooked beans.

Before going to bed, place beans in a pot, covering completely with water plus 3″ above.

Cover with a lid and let soak overnight.

In the morning, drain the water and replace with fresh water (same 3″ rule).

Bring to a boil for 1-2 minutes. Then, cover and simmer for 1-2 hours until the beans are soft.

Drain water.
