Roasting Potatoes and Beets

Behold, the easiest pairing to meat!

Choose potatoes, yams, beets, or carrots; any starchy one will do.

Preheat the oven to 475F.

Chop starches into 0.5-1″ cubes. Toss in a bowl with extra virgin olive oil and black pepper.

Bake bake in a 475F oven for 35-40 minutes, stirring every ~20 minutes.
