Roasting Peppers

Do this if only for the delectable smell.

Place oven on broil.

Cut peppers in half, remove the seeds, and place hollow side down on cookie trays. Brush with olive oil.

Broil until skin is black and charred.

Remove from heat and allow to cool slightly.

Place in a bowl and cover in Saran wrap. This allows the peppers to sweat, cool, and make easier the peeling of the skin.

Once cooled and able to handle, peel off skin.
