Roasted Cauliflower

We almost named this recipe “Popcorn Cauliflower” because it smells like popcorn as it crackles in the oven. It also kind of tastes like popcorn. Hence, popcorn cauliflower.

Makes 2 cups

Toasty, crispy, and better than steamed, roasted cauliflower is a definite repeat for me. And for those of you who think white vegetables are useless nutrition-wise, think again. It’s bursting with fibre, vitamin C, vitamin K, and folate. Or in other words, super healthy things you cannot taste, but that your body adores.

Ingredients:

  • 1/2 a head of cauliflower, cut into chunks
  • 2-3 tsp. extra virgin olive oil
  • Black pepper

How to:

  1. Preheat the oven to 400F. Grab a cookie sheet.
  2. In a bowl, mix together the three ingredients. Spread onto cookie sheet in a single layer. Make sure they are not touching one another.
  3. Bake for 10 minutes, flip cauliflower pieces over, and then bake another 5 minutes. Depending on how large your chunks are and/or how crispy you like them, bake for longer.

Make it a meal:

  • Use as a vegetable side dish along with a grain/starch and a protein.
