Quinoa Kale Salad

Kale is everywhere.

This year’s obsession: kale smoothies, kale chips, kale salads, etc.

What to do? Jump on the kale bandwagon, of course.

Makes 1 serving

This recipe came from looking at my fridge at the end of the week when grocery shopping was scheduled for the next day (i.e. very minimal food left in my kitchen to enjoy).  This is where the creative factor comes in. Needless to say, this salad followed me into the next week, even with a stocked kitchen. I love it!

Ingredients:

  • 1/2 cup cooked quinoa
  • 1/2 cup mixed beans
  • 2 large kale leaves
  • 1/4 red pepper, chopped
  • A medium-sized chopped carrot
  • 2 cloves garlic
  • 2-3 tsp. extra virgin olive oil
  • Lemon juice, to taste

How to:

  1. Combine all chopped vegetables and quinoa with the garlic, lemon juice, and oil. Close the lid on the Ziploc container, give it a shake, and open to enjoy!
