Hidden Almond Rice

Who knew that almonds and brown rice were meant to be together?

Brown rice sometimes gets a bad rap for taking too long to cook, but it is superior to any of the white rices. Why? It retains its whole grain status, meaning more fibre, more nutrients, keeps you from eating too much, and keeps you feeling more full for longer in between meals.

Makes 4-6 servings

When you begin preparing a meal, start with the brown rice so it has time to cook. That way, once your meal is ready to be served, your starch is also ready.

Ingredients:

  • 1 cup brown rice
  • 2 cups water
  • 1/4 cup low sodium chicken broth
  • 3/4 cup sliced almonds

How to:

  1. Add rice and water to a pot over high heat. Cover and cook on high until boiling. Reduce to a simmer and continue to cook until water is completely absorbed. Add chicken broth and almonds. Continue to cook until chicken broth absorbed

Make it a meal:

  • Serve with salmon and steamed vegetables
