Cubed Garlic Salad

It was bound to happen. One night, there was a craving. Maybe it was the influence of a movie night involving “My Big, Fat, Greek Wedding”… Regardless, we stumbled upon Smitten Kitten, one of our favourite web site’s. She calls her meal Israeli Salad, but it’s so delicious we won’t mind that it’s not Greek. Enjoy!

Found: Smitten Kitchen

Makes 4-6 servings

 Ingredients:

  • 2 roma tomatoes, cubed
  • 1 English cucumber, cubed
  • 1/2 red onion, cubed
  • 3 tbsp. minced cilantro
  • Juice of half a lemon (or ~2 tbsp.)
  • 2 tbsp. extra virgin olive oil
  • 1 1/2 tsp. cumin

How to:

  1. In a medium bowl, combine cubed vegetables.
  2. In a smaller bowl, mix together remaining ingredients to form the sauce.
  3. When ready to eat, pour the sauce over the vegetables and mix to combine.

Make it a meal:

  • Add chopped tofu and eat alongside whole grain crackers
  • Throw in some washed, canned beans and brown rice
