Chocolate Avocado Pie

Whoaaaa, nelly.

How good is this thing?

1. We licked the bowl, spoon, and the spreading knife.

2. Leftovers needed to leave the house ASAP! They went to room mates, best friends, and multiple co-workers.

Why? Because we would have eaten it all.

Though this recipe is a fantastic (and much healthier) replacement than many restaurants’ offerings, portion control is still important. Even with healthy foods we can overdo it. Especially high calorie avocados.

In Ally’s usual style, she reads the recipe wrong and ultimately forgot to buy cashews. Sad story? Not even close.

Luckily, there were a few almonds and hazelnuts kicking around in the pantry. And what do hazelnuts and chocolate mixed together amount to? That’s right: hedgehog, Nutella, and/or heaven.

Brimming with dates, avocado, and the Canadian favourite maple syrup, this pie is a sure show…or dinner…stopper.

Our lovely friend and fellow Dietitian Carolyn and is a fabulous food blogger showcasing unique recipes. She continually inspires us to think outside of the box when choosing ingredients.

Ingredients (Crust):

  • 1 ½ cups mixture hazelnuts and almonds (raw and unsalted)
  • 1 cup medjool dates

Ingredients (Filling):

  • 3 ripe avocados
  • 3/4 cup cocoa powder
  • 1/2 cup maple syrup
  • 1/2 cup unflavoured soy milk
  • 1/2 cup medjool dates
  • 2 tsp. vanilla

How to:

  1. Combine the cashews and dates in a food processor and blend into very small chunks (careful not to puree). Press into an 8″ pie plate. Set aside.
  2. Combine all of the filling ingredients in a food processor and blend until smooth.  Pour filling into pie pan and spread over the crust.
