Broccoli Slaw

In the quest to find a solution to traditional broccoli slaw (or creamy sauce with a hint of green), we came across this gem.

Makes 6 cups

Using a food processor, the broccoli can be chopped into chunks the size of dimes. If you don’t have one, finely chop the broccoli (stem included!) to gain a similar outcome. The cranberries and almonds add texture and the healthier sauce adds bite, thanks to the red onion.

If you aren’t a huge fan of red onion, I would omit it in the dressing.

Ingredients (Salad):

  • 1 1/2 heads of broccoli, finely chopped in food processor
  • 1/2 cup slivered almonds
  • 1/3 cup unsweetened cranberries
  • 1/2 small red onion, finely chopped

Ingredients (Dressing):

  • 1/2 cup low-fat buttermilk
  • 1/3 cup low-fat plain Greek yogurt
  • 2 tbsp. cider vinegar
  • 1 tbsp. sugar
  • Black pepper to taste
  • 3 tbsp. finely chopped red onion (or shallot)

How to:

  1. In a large bowl, combine salad ingredients. In a small bowl, combine the dressing ingredients.
  2. When ready to serve, dump the small bowl into the large bowl and mix. If you know you want leftovers, store the dressing and salad in separate containers.

Make it a meal:

  • Use a side dish for summer picnics or with burgers
  • Add a filet of fish and some roasted potatoes to the plate
  • Use over a bed of spinach (add some extra dressing if need be) and throw in some chickpeas
