Garlicky Chinese Broccoli

Women’s Health Magazine nailed it.

Titled “10 Foods, 40 Recipes”, the article made it easy and affordable to eat your vegetables. Each of the 10 foods were chosen for variety in nutrients and ease in finding at grocery stores (see below right panel). The 10 featured foods included baby carrots, black beans, broccoli, brown rice, feta cheese, kale, pork tenderloin, red onions, tilapia, turkey breast tenders.

Makes 2 servings

Generally, when we see more than 2 foreign ingredients, we re-think the desire to choose such a recipe.

This recipe had us reconsider why we never cooked with fresh ginger before! It’s crazy cheap and has a taste that bites.

Ingredients:

  • 1 tbsp. minced carrot
  • 1 tbsp. minced red onion
  • 2 tsp. canola oil
  • 1 tsp. minced garlic
  • 1 tsp. minced fresh ginger
  • ~1 large head of broccoli, cut into chunks
  • 2 tsp. hot water

How to:

  1. In a skillet, combine the first 5 ingredients and cook for ~3 minutes, stirring frequently.
  2. Once softened, add broccoli and stir to coat. Add water and cook for another 1 minutes.

Make it a meal:

  • Use as a side dish
  • Stir into whole grain pasta, toss in some baked tofu or black beans
