Carrot Cabbage Slaw

Definitely a lighter take on your traditional Kentucky Fried Chicken coleslaw and one that won’t leave your stomach feeling as if it’s lined in mayonnaise. Use this recipe as a substitution at BBQs and alongside a summer picnic.

Makes 8 servings

Ingredients:

  • 1/4 small purple cabbage, sliced thin
  • 1/2 small green cabbage, sliced thin
  • 1/2 carrot, shredded
  • The rind of half a lemon
  • 1/4 cup lemon juice
  • 1/4 cup extra virgin olive oil
  • Black pepper

How to:

  1. In a large bowl, mix together cabbage and carrot.
  2. In a small bowl, stir together the remaining ingredients. Add to vegetables and toss to coat.

*Note: this salad tastes best when the cabbage is cut very fine and the dressing is tossed with the vegetables long before serving.

Make it a meal:

Use as a side dish for a hamburger at a BBQ.
