Balsamic Soy Mushrooms

Next to our fathers, boyfriends, and Santa Clause, mushrooms are collectively our favourite fun-guy.

Behold, the magical 5-ingredient recipe that defies those who eat it. Yes, the creators at Nutrition Action write that this is a topping for pasta; however, mushrooms and I enjoy one another enough that I find myself eating bowls of this recipe on its own.

Makes 2 servings

Tonight, a dinner party was incomplete if all we did was serve a bowl of mushrooms. Instead, we used porcini mushroom linguine from Pappardelle’s Pasta in Seattle’s Pike Place Market adding our mushrooms to this recipe.


  • 500 grams mushrooms, sliced (any kind, we used white button)
  • 1 tbsp. extra virgin olive oil
  • 2 cloves garlic, minced
  • 2 tbsp. balsamic vinegar
  • 1 tbsp. low-sodium soy sauce

How to:

  1. In a saucepan, combine oil and mushrooms. Cook until mushrooms are browned.
  2. Add all others and cook until liquids are no longer.
