Banana Chia Pudding

Someone once told us that a favourite breakfast dish resembled the gravity defying test of Dairy Queen blizzards. So true.

It’s creamy with a lovely hint of mashed banana and whatever sweetness you choose to add.  I like to whip this up prior to going to sleep so that the chia seeds have time to thicken up in the fridge. Otherwise, I find that under-prepared chia seeds have a similar texture to poppy seeds…in yogurt.

Makes 1 serving


  • 3/4 cup low-fat plain Greek yogurt
  • 2 tsp. chia seeds
  • 1 banana, mashed
  • Cinnamon, to taste
  • Optional: 1 tsp. sweetness (i.e. honey, jam, I prefer Trader Joe’s Pumpkin Butter)

How to:

  1.  In a container, mix together yogurt, chia seeds, cinnamon, and sweetness. You can add the mashed banana or  throw the entire banana into the container, mashing with a fork.
  2. Store in the fridge overnight for best results. If you want it now, let it sit for at least 15 minutes prior to eating (allows the chia seeds to really thicken up the mixture).

Make it a meal:

  • Use as a topping for oatmeal with chopped fruit.
  • Enjoy as a sweet dessert
