Baked Banana Oatmeal

The dietitian responsible for this recipe is in love with oatmeal. And so are we.

This recipe is great for those who don’t have time to prepare breakfast in the morning. All you need to do is cut off a slab, spread on 1-2 tbsp. natural almond butter, grab a small banana, and BAM! You’re out the door.

Makes 8 servings


  • 2 cups rolled oats
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1 egg, beaten
  • 2 bananas
  • 1.5 cups low-fat milk
  • 1 tsp. vanilla
  • 1 tbsp. packed brown sugar

How to:

  1. Preheat oven to 350F. Rub an 8×8 dish with non-hydrogenated margarine. Place aside.
  2. In a large bowl, mix together oats, baking powder, and salt. In another bowl, mash one banana. Add the beaten egg, milk, and vanilla; combine. Now, add the wet ingredients to the larger bowl containing the oats. Stir well.
  3. Pour mixture into the prepared dish. Slice the other banana and arrange on top.
  4. Place dish in the oven and bake for 25 minutes. Remove dish, sprinkle with brown sugar, and return to oven, increasing it to a broil. Do so for 4 minutes.
  5. Remove from heat, let cool, and cut into pieces. Store in individual Ziploc containers. Place in fridge or freezer.
  6. Eat cold or heated up.

Make it a meal:

  • Eat with a side of plain low-fat yogurt and fruit
  • Enjoy with your morning low-fat latte
  • Spread on 1-2 tbsp. natural almond butter and top with more banana slices
