1 Minute Egg, 5 Minute Breakfast

When watching children, there is little time allotted for oneself. This is where quick meals are crucial. Baking an egg in the microwave may sound weird, but it’s time efficient and delicious.

We kept it simple, but feel free to add fresh/dried herbs into the egg as it cooks.

Makes 1 serving


  • 1 egg, beaten
  • 1/2 tsp. soft-tub margarine
  • Black pepper, to taste
  • Whatever you like on your eggs (I added Dijon mustard – see above image)

How to:

  1. In a small bowl or custard dish, rub the margarine along the bottom and up the sides (basically, where the egg will touch to prevent sticking). Cook in the microwave for 1 minute. Once cooked through, remove from bowl, season with black pepper, and top with Dijon mustard (or whatever you please).

Make it a meal:

  • Serve with fruit and a slice of whole grain toast with a swiping of soft-tub margarine (or natural nut butter)
